This doesn't have to do with gaming per se, but the crossover to gaming for the disabled is self-evident, I think. Some people got together to create eye-tracking hardware & software so a graffiti artist can continue to create. Here's the kicker: the hardware cost comes out to be only about $50.

On Boing Boing, Brandon Boyer wrote an interesting article about Jason Rohrer's April 8th release, Sleep Is Death. In the article, Brandon explains his experience of playing with Jason.
Sleep Is Death is storytelling device designed for two that borrows a lot from our expectations of video games. The first player moves their character around and interacts with the visual environment prepared by the second player. Depending on the skill of player 2, the first player can have a much larger degree of in-game freedoms than in a usual game. 30 second turns will be a minor inconvenience for the first player who just moves one character around, but it'll overwhelm the second player who is in charge of the entire setting and "non-player" characters.
A few slideshow examples of game-play can be found, that'll give you a much more clear understanding of how this might pan out.
